Salad! On a vegan site! Blasphemy!
I know, I know, I swore I wouldn’t post any salad recipes until the temperature hit at least 35°C but this is a warm salad so it doesn’t count.
This would work great as a side with some Chick Fillets or as an entree or do as I did and serve it with a piece of bread and some hummus as a main.
I wasn’t 100% happy with the texture, next time I think I will cook the falafel normally and then give it a quick spin in the processor to bring it back to crumbs and then add it to the cooked couscous but it tasted great either way.
For this you will need:
1 couscous
1 cup falafel cumbs
2 1/2 cups water
1 tablespoon olive oil
3/4 cup parsley
1/4 cup mint
3 cups spinach
1 diced red onion
3 large truss tomatoes
1 birds eye chilli, if you have jalapeños use that instead
1 garlic clove
juice of half a lemon
1 tablespoon tahini
salt and pepper, to season
Add the water to a saucepan
along with the oil and a dash of salt. Cover and bring it to the boil.
Once the water is boiling remove the pot from the heat and add in the couscous and falafel. Give it a really quick stir and cover it again. Leave it to soak up the water for 5 minutes.

While the couscous is doing its thing chop up the parsley and mint very fine. Add it to a small bowl.

Do the same with the spinach but put it to the side in a separate bowl.
Dice the red onion. Add half to the spinach bowl.
And add the other half of it to the parsley bowl.
Dice up the tomato and add it to the spinach bowl.
Do the same with the chilli and the garlic.
Heat a heavy based fry-pan and cook down the spinach mixture just until the spinach starts to wilt. Once it is done put it back in the bowl and leave the pan on the heat.
By now the couscous/falafel mix should be ready. Give it a taste and see. If it is still crunchy add a bit of boiling water and cover it again for a couple of minutes. Once you are happy with it spread it out in the fry-pan and top with the parsley mixture. Once it starts to heat up mix the parsley and red onion through until it all combines.
Squeeze in the lemon juice.
Add the couscous mixture to the spinach mixture and combine it all.
Stir through some tahini and season well.
Serve it with a little bit of olive oil and some hummus and some crusty bread. So quick and easy and fairly healthy for a meal coming out of my house!
